A layered mocktail in which Limonzello & Bitter & Berry combine with pineapple and lemon. Vanilla softens the fresh fruit notes, and the foam layer provides a smooth, full-bodied finish.
Ingredients
- 3 cl Bitter & Berry
- 5 cl Limonzello
- 2 cl vanilla syrup
- 10 cl pineapple juice
- 2 cl egg white
- 2 cl lemon juice
Method
- Place the Limonzello, egg white, lemon juice, vanilla syrup, and pineapple juice in a shaker and shake vigorously.
- Open the shaker, add ice, and shake gently to chill.
- Strain into a chilled glass using a strainer and fine sieve.
- Then use a bar spoon to carefully and slowly pour the Bitter & Berry into the glass along the spoon's stem. This creates the red colour beneath the foam layer.
